Not razor sharp out of the box, like some reviewers have attested to... but sharp enough.



This is a pretty good set, it comes with a small variety of knives that should prove efficient enough for any intermediate chef. I typically consider myself a pretty well versed cook, I usually just cook for myself and friends during social gatherings at my house. One doesn't *need* a million different knives in order to cook a good meal, but it's really nice to have different options. I feel that this set is just about right for the cook at home chef.



My set was complete, the block is in great condition- with a couple extra slots for more knives- and the Victorinox logo was intact (raised button-like logo)... that's what you're paying for, right? The logo!



Though the knives are not forged from tip to handle, the grip and handles of the knives seem to be very sturdy and well made. The handles do have a pleasant feel to them, slicing dicing and slashing has never been more fun.



Like I said, I am not a big knife connoisseur, I received these knives as a gift... but I do like them a great deal. They're definitely an improvement on the $20 set you might buy at your local Sears. But I'd venture to say you could probably find a set just as nice for a little bit cheaper. Company loyalty prevents me from saying anything too negative about Victorinox. But in my experience they have a good reputation for making long lasting products.

We received these knifes from our wedding registry and I feel sorry for the person who bought them for us,because they wasted their money. First of all the set was in a box without any brochure, or instructions for care.Second, the wood block is not only not the original(with the Victorinox logo), but it's bigger and has slots for more knives than there are in the actual set.At first I thought there were knives missing..Not to mention that the slots are all different sizes than the knives included in the set and they don't fit properly.AND the pair of scissors is NOT victorinox at all....Very disappointed..

I received this set for my birthday, as a present from my girlfriend who knows nothing about cooking and less about knives. Upon inspecting the set, I was rather dubious. The plastic handles seemed cheap looking. The blades were obviously stamped, not forged. And they were lightweight, almost flimsy-feeling. However, she told me that she had learned about them from reading a rave review in an issue of my Cook's magazine, which I hold in high regard. So I put my doubts on hold until I tried the knives myself.



These are the best knives I've ever used at any price. The plastic handles are ergonomic: comfortable, non-slip, sanitary handles that fit right into your hand. The stamped blades are razor sharp. Literally: I could shave whiskers with my chef's knife (not recommended). And, yes, they are light, but not flimsy, when you choose the right knife for the job. The chef's knife makes quick work of squash with no flexing, while the boning knife has just the right amount of give for cutting the filet off a T-bone.



In short, they aren't trophy knives. They're workhorses. I appreciate also that the wood block comes with a couple extra slots so you can customize your collection. I just added a 7" santoku to mine.



Conclusion: buy these knives.

I started out with regular Henckles, and I quickly fell in love. Cyber Monday came after Black Friday, and I was able to get these for a great price, I nabbed them the first chance I got.

Immediately, I was very impressed by the quality of the knifes... However, for some reason I find the large chef knife least favorable but the rest of the knives absolutely fantastic to work with. The balance is good, and the sharpness is without comparison. I clean and dry my knives immediately after each session, and I never put them in the washer. I do sharpen them regularly but only if I absolutely feel the need to. This is definately an investment worth making. I've tried other brand of premium knives such as Wusthof... But I still think you get the most bang out of your buck with Henckles for their quality and price.

One time I was at a friend's house helping out in the kitchen and used one of their Caphalon knives... MAN! I couldn't believe it! It was so dull and hard to handle in comparison to the Henckles. Once you go Henckles, you never go back!

I had my eye on the Henckel Pro "S" 18-piece block set for some time, but with the price usually around $500 I wasn't expecting to get it for some time. This Christmas, my parents surprised me with this 8-piece set.



The knives themselves are top quality and razor sharp. My mother said she was actually frightened to use them herself, they are so sharp. They make short work of meats and vegetables, clean up easily and are very comfortable to handle with enough weight to feel substantial but not heavy.



The set includes two paring knives, a 5" serrated knife, 5" hollow-ground santoku and 8" chef's knife, plus shears, honing steel and the block. Overall, this is a fairly disappointing collection of blades... I'd gladly trade the parers for the 7" santoku, or another more versatile knife... I just don't have that great a need for a 2 3/4" paring knife.



The block is well-constructed, as you would expect, but the disappointing thing about it was that it does not have a slot for the Pro "S" line's 6" cleaver, which I already have. As a result I looked around and found the Henckels 19-slot "Super Block" which has the slots for 8 steak knives, 8 knives of varying sizes, shears, honing steel and cleaver. Amazon lists this item as shipping from J&R Music World, but if you buy directly from that vendor, they offer free shipping at the same price on the block.



If you are looking for an entry-level set of high-quality professional-grade knives, this is a good set. If you have particular needs like mine, pay careful attention to the details of what is being offered. Overall, for quality of product, I would give this item 5 stars, but I took one star away for the fact that the block didn't have the cleaver slot (there are enough slots here that a wide slot for a cleaver shouldn't have been excluded) and for the selection of included knives. I mostly use the Santoku knife and don't really need a parer, much less two of them. Perhaps the 4-star rating is a bit unfair considering I could have specified and gotten a different set, but I'm rating what I got based on what I was hoping for. The less-than-perfect rating is not a reflection of the quality of the product at all.

To soon to evaluate the sharpness of the knives in the set. But what I would like to mention is how disappointed I was after receiving the set, that it looked incomplete, in that, there is an empty slot but no tool to go inside of it. I thought I was missing a piece. I contacted Analon who said that's the way it comes. I asked if I could purchase an additional piece to fill the slot. They only sell sets and not individual pieces.

I spent a great deal of money for this set and I am not satisfied with what I received. It was a wedding gift and I feel quite embarrassed about the incomplete look of the set.

They are not the top of the line but respectable for a budding gourmet. Proof of their effectiveness can be found underneath the several bandaids I have had to wear since accidentally mishandling the bed knife once and a steak knife once.



What a joy to have decent knives to use in the kitchen. It helps to inspire me as a cook.



Great for the price and definitely do not put these in the dishwasher. I am proud to own, even if it is on the lower end of the spectrum, one of the finest knife collections currently on the market.

The absolute best is their "Classic" set, however I didn't want to spend that much money so I decided to try the "Gourmet" set. It came with a butcher block, steak knives and a free bamboo cutting board for less then $200. I am extremely pleased with my purchase and I recommend them to anyone. I literally threw away my old set and my beautiful Wusthof's proudly grace my new granite counter!

Forged steel was out of my price range, so I had to go with stamped. ($200 is enough for me, thank you.) The set is nice, a bit light, but good... EXCEPT FOR THE STICKERS. Yes, the red logos on the handles are--in fact--red pixelated laser printer stickers that get ruined in the wash. Get some Goo Gone and spend 20 minutes taking them off before washing the set. Of course, if you were paying for the brand... there is still the logo etched into some of the blades. :)

General thoughts: Decent set, Chef and Bread knives stand out. Stamped, not forged. Handles have a slighly cheap appearance. Scissors can be easily taken apart to be washed. Set has all the knives most people will need. If you are used to el-cheapo $25 knife sets, such as I was, these are a major upgrade and will probably keep most amateur chefs perfectly happy. But - not as good as the Classic series.



I went into a local store to buy a Classic set, and they were out. The salesperson pressured me to purchase this instead, and when I got home I decided I really wanted the Classics. I have decided to return these and upgrade even further (Classics cost around TWICE as much for a comparable set incl. steak knives).



However, despite the slightly cheap-looking handles, they appear to be perfectly decent kitchen knives. I didn't cut anything with them, but I did set them up on my counter, tested each one for balance, and ran my finger over the edges.



They look pretty good overall, although the tang only goes halfway through the knife, and it is even shorter on the two small paring knives (you can see where it stops about mid-handle). And the handle design gave them a bit of a cheap appearance. The block was solid.



I am not sure that I can comment on sharpness. I regret that I did not cut anything with them. The serrated Bread Knife was the only one that felt like it could cut me easily when I ran my finger down the blade. Some of them (particularly the steak knives) didn't feel very sharp, but that might not mean anything.



The Bread Knife and Chef's Knife were well balanced. The rest of the knives were handle-heavy, including the steak knives.



Bottom Line: Get a Classic (or Grand Prix) set if they are in your budget, but if they are not, this seems like a perfectly decent set. Wusthof is known for quality, so these would probably hold up well over the years.

When we moved into our new apartment, we went to IKEA and bought all sorts of furniture and household goods. This included an assortment of their knives. The only problem -- the standard knife block that they sell would have had too many unoccupied slots; and the knife sharpener would not have fit into the block.



I read the reviews of other models of the Kapoosh knife block, and decided that it was worth a try. I am glad -- it works very well. My overall experience is positive, but I have the same gripe that a few other reviewers have had: the knife block is only tilted by about 25 degrees, so that when you want to pull out a longer item (the aforementioned knife sharpener, or the 8" chef's knife), you need to move the block out from under the cabinets. I never had such problems with conventional knife blocks (or with the "Ex" knife block that I bought for my mother-in-law).



The knife block feels a little weird the first couple times that I used it. The gripping action of the plastic rods (bristles) is strange. I found that the best way to put the knives in is to turn the knives sideways, and then let the knife settle into its final resting place as you push it down (instead of trying to push/guide the knife to go down straight).



I reconfigured my items many times before I finally had them ordered the way I wanted. As it stands now, the upper area holds 5 knives, a pair of scissors, a knife sharpener, and a pair of chopsticks. The lower area is still empty right now -- the steak knives will go there when I get around to buying them.
