J.A. Henckels have two major lines. Zwilling J.A. Henckels knives are made in Germany using higher quality stainless steel (except the Twin Cermax line which is made in Japan), and J.A. Henckels International knives are made from non-German countries using lower quality steel. This Henckels Twin L Kitchen 2-pice Set is made in Germany with good stainless steel. Henckels, like Wusthof, keeps secret of its steel formula. Many believe the stainless steel used for most Zwilling J.A. Henckels is very close to 440C, which is a good solid steel grade.



Knowing the paring knife is made from a good steel and learning this set is on sale ($15), I decided to make this purchase. Unfortunately, the construction of this parer is poor. I have no problem with the steel quality. I have no problem with the fact that it is a stamped knife which I knew it. My complaint is the fact that the blade is thin, which makes it too flexible and very flimsy. Part of the reason for its thinness is that it is a flat ground knife, as opposed a saber ground knife. The blade tapers all the way from spine to edge. If it is a Japanese hard steel knife, then a thin blade is desirable, but this is not super hard steel. It neither feels right nor safe that the blade bends as I peel, and then suddenly flicks. This parer is only suitable for the lightest job. As far as I am concern, peeling an apple skin is too tough for this parer. In my opinion, this parer worths no more than $5, and I would not even buy it for $5 as there are many better $5 parers.



Ironically, the shears are decent. They are not the best, but they are solid and have a good feel. They are hold together by a screw-able pivot screw. This allows the blades to be easily sharpened. I really appreciate this as I hand-sharp my knives with different whetstones (diamond and water stones). The shears worths $10 or more. $15 for this set is passable.



I would give the parer a 2 stars rating (or maybe even less) and the shears a 4 stars rating. As a set, I am giving a 3-stars rating. To be honest, I probably would not have make this purchase in hindsight. However, I would not say this is a totally bad purchase. It is just not what I need.

I purchased this item as Christmas gifts. A little early, I know. As I have purchased other Henckel items, I knew this would be a "bullet-proof", quality gift. I have already given some out as birthday gifts, and have received a lot of smiles. Need some good gift items (including yourself)? You won't go wrong. Oh, I did have a Henckels knife that was defective. All they asked was that the knife be returned so they could examine it to try and determine what the fault was. A new one was promptly mailed. I'll be looking for more great deals from Amazon and Henckles.

The shears are very sharp. I cut all kinds of food with them and had no problem. I even tried using them to cut paper and string to test its sharpness and they have passed the test. I wash them often and let them air dry and so far haven't found any rust on the steel.



The paring knife is very sharp and does a nice job cutting finer food items. I use it to remove seeds from fruits and melons mostly. The only downside is that I found a little bit of rust on the blade near the finger guard. I thought stainless steel is resistant to corrosion? No?

At $14.99 for both the scissors and a paring knife, including super saver shipping, this is a screaming deal. I already own the Henckels scissors and paring knife in heavier versions, so why get these?



The scissors are handy in my kitchen for opening my mail, cutting any paper or plastic packaging, and for doing my flower arrangements. They are somewhat smaller than my other pair, but they are every bit as sharp. The handles are almost as sturdy as well; another reviewer uses these for cutting up poultry, but I have my doubts about whether they are sturdy enough. My heavier scissors are available for that and other food processing.



The paring knife is literally razor sharp and does my salads easily. I even used it to slice slits in a frozen pie top, effortlessly. However, the handle is extremely light, and I wouldn't try to use any leverage with this knife.



The best part is that these products are guaranteed by Henckels, just like their other products. I recently mailed in my heavier scissors because one of the handles broke; this pair was over 25 years old. I paid the postage to Henckels, and they sent me a new pair free, including free return postage, no questions asked. You cannot beat that for customer service.



August 8, 2009 update: Now that I have been extensively using the knife for a couple of months, it is still razor sharp. Notwithstanding the thinness of the blade, it is particularly good for taking cooked corn off the cob and for cutting off excess fat from thick bacon. I flat out love the scissors for kitchen tasks; they too are extremely sharp.

They need to be sharpened right out of the box. Some of them (8" chef and 10" chef that I bought separately) have spine sharp enough to cut yourself - I had to have it dulled. Other than that they are OK. If I was buying again I would go with Wusthof.

Prior to purchasing these knives I read the various reviews .. I find Amazon Reviews very helpful! My daughter in law has the Wusthof but I wasn't sure I was willing to pay quite that price since I don't cook as much as she does with her larger family. The Consumer Report information on the Profession S being "Forged because it is very close in form and function to traditionally 'Forged' pieces .. the only difference is that it isn't physically 'forged' from one piece of metal." .. helped my decision also. I then purchased the Henckels and have been just delighted!



Right out of the box they were gorgeous! Not a single defect/flaw/scratch .. each one wonderfully sharp .. I tried each knife .. slicing a piece of paper using from tip to handle .. like slicing through butter!



Quite frankly I would never abuse a fine piece of china nor a good knife .. so I don't worry about warping or discoloration of the handle .. it has always been my practice to just quickly scrub and dry my knife after use .. even my old cheaper knives still look good after years of use .. I'm so happy to finally have some GOOD knives .. trust me .. I'll take REALLY good care of these knives! Have some pride folks! (And if in time they DO get a bit banged up .. mores the benefit to my family .. it created some good food in the banging up!)



I also found the Customer Service Department more than helpful when I called because I wasn't quite sure about one area of registering my product online .. they couldn't have been nicer or more helpful.



I do not have huge hands and these fit my hands really nicely .. AND my husband is BIG .. and he likes them also!

I recently bought a Henckels Professional "S" 9-Piece Block set, and I must say that it looks and feels like the real deal.



My brother is a French Chef, and he preaches the importance of good knives. So when I decided it was time to get a real set of knives, I bought the best that I could afford.



It is right that these knives might not look as good as some cheaper knives, but here the money are not spend on the visual appearance, but the on the actual quality of the blade.



The balance on the knives are near perfect, and they just feel so nice in the hand.



When the knives comes out of the package they are only moderately sharp. So the first thing I did was to sharpen them, and yes they can hold an edge. I use a Spyderco Triangle Sharpmaker 204MF, and after 5-10 minutes with each knife it was upgraded from a utility edge to pretty close to a razor edge, and they can hold that edge.



I must admit that I love these knives, and it is a pleasure to work with them.

I purchased my Pro-S set roughly two years ago and have used them on an almost daily basis since.



The blades are of very good quality. Sharpness along the cutting edge was nearly even from base to tip when new. With weekly honing with the "sharpening" steel, the longer 8' blades have remained very sharp. Only the paring knife has lost its sharpness and needed a professional sharpening. The backs of the blades were properly deburred and dulled, allowing for tremendous pressure to be applied without injury to self (chopping turkey bones in half with the Chef knife). The serrated utility knives continue to cut loaves of bread as if they were butter.



My largest complaint has been with the handles. They are a sandwich of steel between dense black plastic. When run though a dishwasher (even without heated drying) or left overnight in soapy dish water, light rust sometimes occurs in the tiny gap between these two materials. It is very superficial and can be quickly cleaned, but it is annoying. The plastic is also starting to see light spidercracks on the paring knife.



Furthermore, the rivets have pitted and tarnished. I can no longer soak my knives before washing them, and the dishwasher is completely out of the question for fear of further damage.



Lastly, the wood block has not warped or discolored even after two years of moisture and direct evening sunlight. The top four slots on the right side all handle 8" blades. The topmost slot could even handle a 12" blade if required.

Beware of the tricky marketing Henckel is using with these sets. Only the kitchen knives in this set are forged. The steak knives are stamped. The kitchen knives themselves are great. Solid, hefty, very well-made (in China, not Germany, if that matters to you) and extremely sharp, just like good-quality European-style knives are supposed to be. I really wish Henckels had included a Bread knife with this set, though. A Chef and Santoku knife are built to handle a lot of the same things, so why include both of those but no Bread? Rust has not been an issue for me like it has been for other reviewers. This set will be perfectly fine for casual chefs (like me), but you do get what you pay for when it comes to knives, and there's a reason why most of Henckels' other knife lines are so much more expensive than these.

For about a month the knives were fine until they started rusting. There are rust spots all over my set and I will be shipping them back to Henckel's in hopes that this situation will be remedied. This is overall a nice set of knives, good weight and they don't bend too much. The price is the selling point here, Henckels International means "made in China or Taiwan" not Germany but overall it is a nice set. It's great when something very simple in your life is just very high quality. The blades are great (not too thin and flexible like one poster wrote), and the holder keeps them right where I want with a tiny footprint. Two minor quibbles: the rainbow plastic handles detract from the sense of extreme quality, even though I have no complaint about their function at all. Also, the smallest and largest knife are specialty blades which aren't as useful to me as two more straight blades would have been (the red is a cerrated utility knife, the blue "peeler" has a somewhat hooked point). I mostly use these for chopping up many snacks a day into toddler-friendly bites, so the more sharp and handy simple knives the better.

This is the second set of Henckels knives i have purchased...the first being about 15 years ago. the first set has been used almost daily and was a steal at about 10 dollars. I purchased the second set because of the great price and because of the holder that comes with the set...it sets on my counter next to the 500 dollar set Cutco knives in their holder... i use the green paring knife the most and the bread/sandwich knife next...I gave a set of four knives to my brother in law and he uses them almost as much as i do. I had a small stainless steel paring knife that had been my multi-purpose knife for 30 years. I really liked it because it would cut pratically any fruit or vegetable but not my fingers! When I returned from a trip, I could no longer locate the knife.



After spending more time at Amazon.com than I'd like to admit reading about various knives, I decided on this set since it not only had a paring knife but other sizes as well. As it turned out it was a good decision as I use all the knives except the serrated one which I probably should use but I've become so accumstomed to reaching for a bread or steak knife that I still do that. I'm working on that little problem though!!



Meanwhile, I really like this set. The wood block is heavy and doesn't tip and the colored handles helps me remember which knife is which. I still miss my 30 year old wonder but since I had to replace it, then I'm happy this set took its place.

I bought these knives for my wife for Christmas. We bought them to complement our regular set of Professional S knives.



About the knives: The look of these was dead on with our current set. The finish of the handles could have been better. They feel a bit light and the handles just aren't as smooth as the Professional S set. That being said -they weren't nearly as expensive. I posted pictures of the end serrations on the blade. Not sure how this will effect sharpening them in the future.



About the block:

It was lighter in color than the other knife block we have. The stock photo is a very good representation of the color of the product we received. I would have been more pleased if it matched exactly.



Overall:

My wife is very happy with them. They cut well and look pretty good. I only ask for a bit better quality feel and a slightly different block color.

J.A. Henckels is the best! I have been adding to my collection for several years and recently I have added these steak knives from J.A. Henckels. They are beautiful and very sturdy. The price is very fair for the product received and the block is beautiful,looks great on the kitchen counter and takes up very little room. These knives stay sharp and also getting the J.A. Henckels hand held sharpener guarantees they remain that way.

After I used them ONCE and washed them in the dishwasher the blades rusted! That's unacceptable. I have cheap stainless steal steak knifes I've had for 25 years that have NEVER rusted in the dishwasher. The box says dishwasher safe although in small print it says not recommended. Now I know why. They are inferior.
I purchased these knifes thinking I was going to get something a cut above. They are not as good as a $10 set of Steak Knifes from a discount store. Save your money!
I am returning mine.

I had a set of steak knives that didn't cut very well. I was so sick of them I decided to spend what I thought was a considerable sum to get "good" knives. Unfortunately, I did not see the editor's comments on this site before buying--they do tear meat, rather than cut it. Frankly, they are only marginally better than those they replaced. [The block is also fairly useless. Who wants their steak knives sitting on the counter top all by themselves? I have my kitchen knives in a block and do not need or want two blocks sitting out.]

This was the solution when we wanted to replace a couple of cheap knife blocks. We consolidated all our knives, of all shapes and sizes, into this one block. The quality is good and free shipping was a good deal as it was very heavy. We have upper cabinets that are a few inches lower than average. This block easily fit underneath with room enough to pull even the longest knife. There was a slot large enough for our small cleaver and we used the row of small slots below for paring knives.

This is one of only two knife blocks that I could find online with a space for a cleaver. It is well designed, slanting enough that it can fit under a cabinet and still provide easy access. The quality is excellent. The price at Amazon was significantly less than other merchants, at the time I purchased, it was easily 40% of the others. It seems to have gone up a little. Always shop around-- I could have paid as much as $170 for this at an upscale online merchant.
