My husband begged for a set of Henckels knives for Christmas a few years ago, so in 2001 I caved in and got this set for him. I wonder how I ever got along without them. We use these knives every day for everything! The ergonomics makes them easy to hold and keep a grip on. No task is too tough or too tender for these knives, and they stay sharp for years. I use the sharpener about once a month or so on the 8-inch knife, which sees daily use. The only bad thing is I keep losing the kitchen shears! I use them all over my house for everything from cutting through chicken to cutting flowers, and sometimes they don't make it back to the kitchen. No one should be without these in the kitchen; they are definitely worth every penny! Quit buying cheap knives and buy a set of these, and you'll never look back!



UPDATE: We actually bought these in 2001. We still have them (although I'm still losing the shears all the time) and we still love them! I'm going to have to get them professionally sharpened sometime; the sharpener that comes with it works great, but after a while even the most top-quality blades need to be rehoned. The Henckles stickers on the sides have all fallen of, but that's no great loss. Still wouldn't trade them for anything!

I got a big set of 5 star knives for Christmas, and think they are great! They cut beautifully, are very well made, and easy to clean. I think the handles are really just a personal preference. I understand the blades are the same in the Pro S and 5 Star line. My dad (who also swears by Henckels)has the Pro S series, and finds the larger more ergonomic handles in the 5 Star line uncomfortable. But I find them easier to work with. I have noticed a few spot/stains on the blade of the large chefs knife in the past few months, but I assume that this is probably due to my own maintenance practices.

The knives are very good, however every handle on the 5 Stars looks worn (almost scratched). I thought it may have been shipping damage since the knives do move around in the box. However, I took a trip to the many stores to see in what they look like at retail stores. Every store (including Williams and Sonoma) had very worn looking handles. I check display and from brand new boxes. There is something wrong with either the composite they are using or the process. BEFORE you order any 5 star knives check them out in person to avoid frustration with the handles. Henckels is a great company and these are great knives, but be forewarned the handles on all of the knive look dirty (especially the [end] of the handle).

I purchased two Mondail wood drawer blocks, one small, one large, to fill a particular kitchen drawer. Combined, they fit the space perfectly. (Measure carefully!)



Nice to remove the knife block from the counter and have one less thing to dust or move around when cleaning the kitchen. Always ended up having to dust off the knives as well; the old block resided next to the refridgerator, which naturally spews dust onto anything in proximity.



Well worth the investment to have a bit more space and something less to dust!

This holds long shallow blades (like a serrated, bread knife) ok, but a standard 8 inch Western chef's knife, or a Japanese Santoku, flops over in the slot and falls out because the blade slots are too wide and too shallow. Obviously, knives falling out of the holder and banging around in the drawer is not the best solution.



It looks nice, and I expect that it would last a long time, but since this item fails at the one thing it's intended to do, I can't rate it higher than one star.

The knives are attractive and sharp with a substantial feeling in terms of weight. We have noticed a couple of spots on one of them that look like rust. It won't wash off or wipe off. Really enjoying this knife set. The selection and sizes of knifes are good for home cooking. Have owned these for about 8 weeks now and they knives seem to be holding there sharpness well. I particularly like the Santuko knives and use those the most. And I found cleanup of the knives to be simple and easy. They fit well in my hand and feel very comfortable. They also seem well made and high quality.



While I'm not a chef myself a couple people I work with are and they showed me a bunch of different manufacturers knives. They told me they rather liked the Calphalon knives and suggested I check them out. I bought the 7" Santuko by itself prior to buying the set. I liked it so much that I decided to invest into a set. No regrets at all. A set of knives like this will last me for many years to come.

These blades are NOT stainless steel - the damascus style outer metal is stainless but the knife edge itself and the center "core" of the blade is actually high carbon tool steel and rusts, pits and even chips away VERY easily. Anyone who owns high-end knives knows that this is completely unacceptable for any knife marketed to the general public.



I own several Hinkels, Wosthofs, and even two Shun "classics" and received the 5" Santoku knife as a gift. I very much enjoyed the knife - from the unconventiaonal look to the fierce quality of the blade. It was great until one fateful day when I was lazy after a dinner party and left the blade alone in a slightly wet sink. The next morning, you wouldn't believe how badly the knife edge splintered and rusted after only 12 hours! It was completely ruined!



Every one has been warned!



Do NOT purchase these knives.

Have now had Calphalon Katana's for almost two years; may initial reactions was what great looking knives, but I've found the beauty is somewhat skin deep. The knives are initially very sharp but they don't hold a edge as well as my (much more expensive Shun knives). But my biggest gripe is that if they are NOT cleaned and dried right away they tend to rust, most annoying. I've been very careful about this, but when others use them the problems persists; and if the rust develops close to the edge, the edge tends to pit. This can and has been corrected but I don't know why it should be a problem. I care these knives the same as I do with a few Shun knives that I have and I don't have the same problem with them. Probably a different type of steel used, but both have the beautiful layered blades. The Shuns are 3 to 4 times more expensive than the Calphalon Katana's, they are sharper and stay sharper longer and are a little lighter. The Kantana's are a good value for what you get, the Shun's are an investment.

Pros:

These knives are pretty, with a rounded black handle, and a layered damascus-style blade. This means the blade, while relatively smooth, has a wavy-layered look to it. The Amazon picture is accurate to what you will receive in your set. Out of the box, each knife is quite sharp; enough to shear paper, but not hair.



I have smaller hands, and have some trouble wielding the 8" chef's knife, but find that the 5" Santoku is excellent for chopping vegetables. The 6" utility knife is also very useful for thinly slicing meats. I do use a different paring knife (Pampered Chef) as I find the Katana paring knife a little too sharp and rigid for say, lopping the ends off string beans in my hand. We also made the additional purchase of the 9" bread knife to complete the set. The bamboo block is attractive, and the slots are wide and deep enough to put other wide-bladed/long knives in. However, note that if you get the bread knife, that only leaves 3 empty slots (i.e. no dedicated steak knife slots).



Cons:

Two slight cons about this set: (1) The diamond-sharpener looks too coarse to use on these blades, and; (2) The shears in this set are lackluster. While they are relatively heavy-duty, they do not come apart for cleaning, and the handles are a little large and unwieldy. I prefer a smaller-handled set of kitchen shears that come apart for cleaning (when I decide to cut meat instead of slicing it, a la Alton Brown). But in their defense, they do cut cleanly.



Comparisons:

We love our Katanas, and they make ordinary chopping/slicing a much more endurable chore with their sharpness and ease. If you are "stepping up" from an ordinary consumer-grade set, you will definitely feel the difference. For example, I had a $90, 10-piece Kitchenaid set. The Katana Santoku knife is definitely more balanced, and the garlics/onions slide right off the Katana's grooves, whereas sometimes foods would stick on the Kitchenaid. I do find that the Kitchenaid chef's knife is slightly easier to handle, due to the longer curve (better rocking-chopping motion), and the slightly reduced weight, but the Katana is sharper, more rigid, cleaner-cutting, and therefore faster. The Kitchenaid shears were lighter (easier to wield) but flimsier. Unlike the KitchenAid shears, don't expect the Katanas to make a scissor-like snipping noise, they are entirely silent. The Katanas do require slightly care than your run-of-the-mill knife set, but simply wash them shortly after you're done using them and dry them prior to putting them back into the block.



Personal Opinion:

I don't know what "Professional Chefs" think, and I'm just an average cook. Thus, these knives went above and beyond my expectations by reducing my prep time, and adding an attractive focal point to the counter. Granted, they don't come out of the block making a lovely ringing steel noise like our Shun steak knives, but for the foreseeable future on a limited budget, the Katanas are a worthy investment.



Some Miscellaneous Notes:

These knives are made from VG-Japanese steel, but they are manufactured in China. We found this set (1st Quality) at more than 50% off in one of the big box stores, which made it a steal. However, if we had paid full-price, we probably would have done a comparison with a Shun knife set instead.



[Edit - July 2008] Since purchasing these knives, we have noticed the following: (1) do not leave them overnight in water - as they will rust badly, (2) the 5" Santoku has inexplicably developed two hairline fractures in the blade. It was my favorite knife, was not used on inappropriate objects/materials (not used for chopping bones or anything), and was always used on a cutting board, so this development within a year has been very disappointing. I still like the set, but the rusting and the fracturing make me a little less pleased with them. I would drop the star-quality to 3.0-3.5.

The Shun Ken Onions are definitely professional-quality knives. Straight from the factory, the cutting edge perfectly slices through a piece of paper and actually slices through a piece of cardboard with just a little more pressure. The feel in the hand is extremely comfortable. The contouring helps with that comfortable feel.



Normally I wouldn't buy a set of knives but would rather buy individual knives as needed, but the selection of knives (8" Chefs, 5" Utility, 10" General Purpose, 3" Paring, and Kershaw Kitchen Shears) is perfect for all-round utility. The knife set comes with a bamboo knife block that is both functional and stylish. Overall, I am extremely pleased with this set and expect it to last several generations at least.

I bought this block set a month or so ago, and I love the knives!! Razor sharp, good balance, very comfortable and secure grip. I use the serrated slicer daily on home baked bread, I can slice the bread potato chip thin if I like. The Chef and utility knives are really nice and work super. The paring knife took some getting used to because of the angle of the blade to the handle. A short learning period though, and now it seems like an extention of my hand. The bamboo block is a nice piece of craftsmanship, and with the attractive knife handles sticking out looks great. Note the angles cut into the sides of the block itself, they let the knife rest in a completely safe and secure manner. I added the 7" Ken Onion Santoku, and it fit in an empty slot like it was made for it. The included steel has an angled finger guard that is the correct angle for honing your knives, reducing the guess work. Bottom line, if you are comfortable spending this much money for kitchen knives, I recommend this set completely. They replaced a 30+ year old block set of L.C. Germain knives, I held on to two of those and they fit in the block as well.



The products arrived promptly, and really well packaged. The outer sellers box kept the inner product box undented. The knives came wrapped very well, and were perfect when I opened them very carefully. The block is heavy as it should be, and that was packaged so it didn't shift at all. The separate Santoku knife was packaged surprizingly well, in a really handsome box. I am completely satisfied with these knives, the block, the quality, sharpness, fit and finish of this set is completely perfect. High quality tools to last a long, long time. Totally happy with Amazon.com once again! One baffling thing... the two screwdriver like blades in the handles of the kitchen shears. I am completely at a loss to figure out what they are for. The shears disassemble for easy cleaning as well, a side benefit for sure. I'm glad I bought this knife set!

I ordered it on December 13th and I received it December 23rd with the Free Shipping. I needed a daily use block set because I love to cook and I wanted a eye-appealing since it was going to be sitting on the counter of my kitchen. The Block was nicely built and had a in-block sharpener which is fantastic. Each knife was sharp and felt heavy in the hand, which made it feel more stable. They were stainless steel and had a aerodynamic design which was very eye-pleasing especially in my stainless steel kitchen. The steak knives were not serrated, but cut easily into meat. The cheese set and mezzaluna were great bonuses along with the block set. They are not made with the same quality as the knife set so don't expect it. The cheese set is nice with wooden handles, and the mezzaluna is very sharp with plastic handle.

With the Omaha Steak Offer. As I recall it was a 3-Option deal. They would have either a chicken and burgers option, an steak and dessert option, or chicken and fish option. Don't quote me on that, it's just from memory. I found the offer under Special Offers on the page, but I'm sure you could search for it on amazon's website. You would need the UPC bar code from the box, the printout about the special offer, and the receipt from amazon that came from the box.

Overall I am very happy with my purchase and will buy from Chicago cutlery again, if not the same set.
