"Henckels Twin "Select" - NOT" 2008-12-18
By PSach (South)
I purchased this 7 pc Twin Select set when it was on Amazon for $299 thinking what a deal. When they arrived the knives were "dirty" and some had scratches. They were new - just grimy in an industrial sort of manner. Also, the handles have an ugly seam between the handle and the bolster? It totally destroys the smooth look.

The block was more poorly finished than knife sets that I have seen for a fraction of the price. Even at $299 these are ugly and heavy. I never used them so I can't comment on that aspect. Needless to say I returned them to Amazon and rec'vd. a full refund due to Amazon's excellent customer service.

"The best balanced knives around" 2004-02-08
By T. Newbold (Lago Bertrand, Patagonia, Chile)
These knives feel so natural in your hand that you might as well be Wolverine from the X-men (OK, they feel supernatural). Each of the knives is very sharp, holds an edge brilliantly, and is a pleasure to hold in your hand. The brushed stainless finish of the handles is really handsome and would fit in any kitchen. The knives are a real pleasure to use.

"Sharp knife at first but..." 2003-06-13

I bought this set about 6 months ago and it was sharp and well balanced. Recently I notice that the blade was chipping off and started to get dull, I don't know if this is a flaw or time to get it resharpened. I took very good care of it and never put it in the dishwasher. Overall its a good knife that probably needs sharping done on it every 6 months.

I orginally purchased the Twin Star Plus but it was a real disappointment. Would not stay sharp and kept returning them-finally had enough and went for the Twin Select. Best choice-the best knifes we have ever owned! Worth every penney we spent! They do an incredible job and feel perfect in your hand. The Henckel Company truly stands behind their product and only want their cutomers to be happy. It's such a pleasure to have good knifes that do a beautiful job - you will never be disappointed with this choice. From a very satisfied customer !!

"Perfect for people who want too many knives" 2001-08-16
By Michael J Edelman (Huntington Woods, MI USA)
Five stars for quality- and one for the concept.

One of the centerpieces of any real show-off kicthen is the knife block stuffed with gleaming stainless German knives, one for every conceivable purpose. And they all shine like the day they were purchased, because few, if any, of them ever get used.

How many knives do you really need? For most cooks it's one. Maybe two. A good chef's knife can do everything from slicing a roast to making radish flowers and everything in between. Add an inexpensive serrated knife for bread and tough-skinned vegetables, and you're on an equal footing with any professional chef. If you clean your own fish (which is unlikely, unless you also catch them), you need a filleting knife. And that's it.

So really, most of us need two knives. This set gives us five, plus a block and a sharpening steel. But for a fifth the cost, you cna buy a really nice chef's knife- with a 10" blade, rather than the 8" found in this set- as well as a serrated knife and a steel, and still have enough left over for a copy of How To Cook Everything and enough groceries to make a nice dinner.
