In the overall scheme of things, this knives are cheap for the number of knives you get at the price point. I grew up in a household where we couldn't have a sharp knife because my mother would always slice her fingers open. Some 20 years later, a heavy sharp knife feels amazing when you're using it! Must be something about the mother thing, but I can imagine when cutting chicken that the blade is going right through my finger, bone and all. Which I think that most of these knives would be fully capable of doing!



I recommend that you use a sharpening kit like this for sharpening any knife: Smith's DFPK Diamond Precision Knife Sharpening Kit These kits are amazing and will put a professional edge on any knife. You can adjust the angle of the sharpening edge, down to the razor thin edge like an X-Acto blade.

Almost 30 years ago my Consumer Reports magazine rated Chicago Cutlery wood-handle knives as the best they tested, and a "Best Buy". So I bought a set.

Boy were they right!! All I have left is a single steak knife; my ex-wives have the rest of them. So now I have to buy a new set. I'm buying the same thing that I had before. I wouldn't buy anything else.

The one knife I still have is as good as the day I bought it. It has an incredible edge; a couple of swipes with the steel and you can shave with it. It rarely has been in the dishwasher; I clean it with a sponge and a bit of diswashing liquid. The wood handle looks a bit "used", but is as tight as ever on the 3-rivet tang.

I expect my new set to outlive me (I'm not in the market for any more wives).

"Contrary to popular belief", a "sharpening" steel doesn't actually sharpen the blade, it simply straightens out the microscopic cutting edges. When the knife gets dull (mine never has!) have it professionally sharpened -- NEVER use any knife "sharpener" that you can buy in a store!! It will more likely than not ruin the blade.

By the way, I also have read in Consumer Reports that lab tests came to the remarkable conclusion that wood surfaces harbor almost NO bacteria. Thyey're not sure why; there must be something in wood itself that is hostile to bacteria. Plastic surfaces, such as cutting boards, get microscopic cuts in them that become germ heaven!

This knife-set is excellent for the price. I have owned my set for 10+ years and they are still in great shape. The people who gave them a low rating are ignorant (1 star and 3 star). The person that gave them a 2 star rating seemed to like them but was comparing them to top shelf knives.



If you do not want to care for your knives and throw them in a

dishwasher; buy yourself a set of Ginsu knives every few years. If you

take care of these knives, they will last a long time.



I coat the wood handels every other month with mineral oil (double coat a new set the first time). This seals the wood to avoid staining and gives a richer look.

I also sharpen them as needed with a cheap Smith's knife sharpener (fine stone ONLY).
